Pulled Pork Stuffed Sweet Potatoes

Ingredients:

  • 4 medium sweet potatoes
  • 2 cups pulled pork
  • 1/2 cup BBQ sauce
  • 1/4 cup chopped green onions
  • Sour cream (optional)

Instructions:

  1. Bake sweet potatoes at 400°F (200°C) for 45–50 minutes or until tender.
  2. Slice open the sweet potatoes and fill them with pulled pork.
  3. Drizzle with BBQ sauce and garnish with green onions. Add sour cream if desired.
